Elkhorn Valley Packing Co. (est. 19549) implemented an approved HACCP plan on November 1, 1998. Since that time our plan has periodically been reassessed as updates occur and annually in accordance with USDA standards.
Elkhorn Valley Packing Co. (est. 19549 & 19549A) has reassessed its HACCP plan to comply with FSIS notice 44-02. We have found that E.coli 0157:H7 is reasonably likely to occur in beef plants. Our slaughter facility in Wellington, KS (est. 19549A), has added acid wash as a CCP. Our Wellington facility has the following interventions:
(1) Acid wash (New CCP)
(2) Steam vacuum system
(3) Carcass sampling procedures
(4) Inspection and trimming procedures (CCP)
(5) Cooling (CCP)
We also have purchase specification documents from all our outside suppliers on file. This is to insure that all suppliers have interventions in place and are taking the necessary steps to reduce or eliminate E.coli 0157:H7 below detectable levels.
Elkhorn Valley Packing Co. has taken these steps to insure that our product is the safest possible. Food safety remains our #1 priority.
